Chicken Karahi / Kadai

chicken karahi is famous pakistani cuisine,its easy to make.if you want to plan a menu that can be prepared   in 30 mins then make sure you treat yourself with this delicious chicken karahi. by chef zakir..........



INGREDIENTS

  1. chicken small pieces  - 500gms
  2. tomatoes - 3   (roughly  grind)
  3. oil - 3-4 tbs                          
  4. crushed  cumin- 1/2 tsp
  5. crushed coriander seeds - 1/2tsp
  6. ginger garlic paste - 1tbsp
  7. green chilies - 4-5
  8. coriander leaves - 1 bunch
  9. red chilli powder -  1tsp
  10. tumeric - 1/4pinch
  11. salt - as required



METHOD


  1. heat oil in a kadai, add ginger garlic paste and saute for few seconds
  2. then add crushed coriander and cumin seeds and  stirr
  3. add chicken pieces and cook for 3-4 mins
  4. now add lengthily cut green chillies and coriander leaves and mix well
  5. then add tomatoes(roughly grind ed),salt and red chili powder and tumeric powder and   mix well
  6. cover the kadai with a lid and cook until chicken  is done and water is dried
  7. garnish with fresh coriander and serve hot    with chapati or naan

Puneri Style Tomato Rice


Tomato rice puneri stlyle is a Maharashtra recipe and  with slight variation.. its tangy tasty and very spicy.. there are many variation in making Tomato rice this is my style...


Ingredients;

  1. Boiled rice - 2 cups
  2. Tomato - 4 medium (puree)
  3. onion - 2 medium size
  4. oil - 4 tbsp
  5. mustard seeds - 1 tsp
  6. cumin seeds - 1 tsp
  7. pinch of hing
  8. green chilies - 3
  9. curry leaves  -6 to 7
  10. ginger garlic paste  -2tsp
  11. garam masala   - 1tsp
  12. Sambar powder - 2 tsp
  13. tumeric 1/4 tsp
  14. tomato - 1 cut in cubes
  15. sugar  -1 tsp(optional)

Preparation;

  1. Heat  up oil in a kadai add mustard seeds , cumin seeds,curry leaves and  hing when it begins to splutter add onions and cook till it turns translucent
  2. Add ginger garlic paste and saute for 2 mins
  3. Add  sambar masala and mix
  4. now add add tomato puree, red chili powder, turmeric and garam masala powder mix and cook covered for 5 mins
  5. add cubed tomatoes salt , sugar, green chilies stir and cook for 2mins
  6. Lastly add the cooked rice mix nicely and cover and cook for 2mins
  7. garnish with chopped  coriander and serve hot with Raita or Pickle

Arabian Delight ( rice and sago kheer)

Arabian delight is a simple rice kheer with sago in it... there is a short story behind this dish....when i was in school there was a cooking competion i made this kheer and i had to give a unique name to this dish so i named it as ARABIAN DELIGHT the name it self was so different that made me won the first prize..and ofcourse the taste also counted...school days are the most unforgettable days in every one's life. ok let me come to the recipie so here are the ingredients 

 




ingredients;


  1. milk full cream - 2 litre
  2. rice - 1/2 cup
  3. sago - 1/4 cup
  4. sugar - 1 cup
  5. almonds and nuts chopped - 1/4cup


method;


  1. first wash and soak sago in water for half an hour, next coarsely grind the rice in a mixer/blender wash and soak for an half an hour.
  2.  Take a deep bottom non-stick pan boil milk till it reduces and thickens. now add rice and cook when the rice is half done add the sago and cook further till rice and sago gets fully cooked now add the sugar and keep on stirring in simmer flame till the sugar gets dissolve completely.
  3.  switch off the flame add chopped almonds and cashews. 
  4. Allow it to cool and serve chill

notes;

  1. i used Egyptian rice as it gets cooked faster and thickens the milk , you can use any rice
  2. grinding the rice to one pulse is necessary 
  3. dont forget to soak the sago,you can also boil the sago in water add to milk
  4. continuous stirring is important

Mutton Pepper Masala

mutton pepper masala is unique blend of spices it goes well with rice , chappathi, khuska, parotta....etc i fond of trying new dishes becoz iam bored of trying the same masala this is my latest addiction.....i have used cooker for cooking this masala becoz its easy and quick and mutton cooks faster. if you want you can use a kadai.....


Ingredients;


mutton - 500gms

garam masala powder - 1 tsp
coriander leaves -hand ful of leaves chopped
oil - 2-3 tbsp
water - 1 cup
salt as per taste




for grinding;



  1. onion - 1 medium size
  2. tomato - 2 large
  3. pepper corns - 1 tblsp
  4. ginger garlic paste - 1 tblsp
  5. green chilli - 1
  6. cashew nut - 4-5
  7. cinnamon stick - 1 inch
  8. jeera - 1/2 tsp
  9. curd - 1tbsp
  10. tumeric - 1/4 tsp


method;

  1. firstly wash the mutton piecies and keep aside
  2. blend all the ingredients given under  grinding table in a mixer to a smooth paste.
  3. take cooker add oil add the masala paste and cook till the oil sepetates from the masala and raw smell goes off
  4. after this add the mutton , salt, tumeric powder and saute for 2-3 mins
  5. lastly add gram masala, coriander leaves give a stir and add water and close the pressure cooker lid and cook for 4-5 whistle..
  6. after the whistle  switch off the stove wait for the pressure to release
  7. open the lid if there is water in the masala reduce it till the oil oozes out of the masala
  8. that it trasfer it to serving bowl and garnish with chopped coriander.......

DRUMSTICK AND MUTTON CURRY



Recently i bought some fresh drumstick and prepared this curry masala which is one of my favourite recipie.. though it takes lots of time in cooking the outcome is delicious with exotic flavours and iam sure it will be same for all of you.

INGREDIENTS;

  1. mutton [with bone] - 500gms
  2. drumstick - 3 [cut length wise]
  3. onion - 2 big
  4.  tomato - 2 medium sized
  5. ginger garlic paste - 1tbsp
  6. chilli powder - 1 tsp
  7. tumrric powder - 1/4 tsp
  8. oil 3- 4 tbsp
  9. salt as per taste
  10. water - 1cup


method;

  1. first wash mutton  and keep aside
  2. chop onions , tomatoes, and cut drumstick length wise and set aside
  3. [ i used cooker to cook this recipie if u want u can cook in kadai also.. but it will take longer time the choice is yours}
  4. now take cooker heat oil to this add sliced onions and saute till it becomes translucent
  5. now add ginger garlic paste and saute for 2 mins. add mutton pieces and salt and cook futher
  6. then add chilli powder, tumeric powder, tomatoes and cook till it turns mushy now add 1 cup of water and give pressure for about 4-5 whistle 
  7. after the whistle dont be in hurry to oen the cooker wait till the pressure goes down 
  8. now lastly add the drumstick give a stir and cook in cooker for one more whistle and switch off the stove{ DONOT GIVE EXTRA WHISTLE AFTER ADDING DRUMSTICK OTHERWISE THE DURUMSTICK WILL TORE APART}
  9. when the pressure goes off open the cooker transfer this to a bowl and garnish with chopped coriander leaves and serve hot  with rice.
